Instant Pot Lentil Soup-Middle Eastern Version

My last lentil soup recipe was really good, this one is EVEN better. I know what you’re thinking, how many lentil soup recipes can there be? Do people really eat lentils that much? There are a bunch of lentil soup recipes AND people love lentils, including me ☺️ I am okay with not eating meat for awhile, I could even probably do a vegetarian diet, but my husband loves meat. One dish he likes that is meatless is lentil soup. Funny thing is, he introduced me to lentils and I had never eaten them before. Well now I’m hooked. Lentils are good for you and taste really good too! As long as you cook them following my recipes 😂 or if you have a really good recipe, share it with me!

This is a vegetarian dish but you can make this vegan by subbing the chicken broth with vegetable broth. All of the flavors of the seasonings make this a tasty dish, you don’t even miss the meat! If you want to add more veggies to this, you will just need to add more water. If you want to make this on your stove top, you can definitely do that. You will need a stockpot to make this in or a Dutch oven. It will take longer to make on the stove, you will just need to cover it and let it simmer for about 30 mins or so. I used brown/green lentils for this recipe and they turned out perfectly soft. If you use black lentils, it will cook even faster!

Sautéing up onion and garlic in the instant pot.
Added in diced bell peppers and sweet peppers.
Adding in seasonings, stirring to cook through.
Added in tomato paste.
Added in diced tomatoes with juices.
Added in water with chicken bouillon, diced the bouillon cubes.
Rinsed and drained the lentils then added in. Stirred up and a bay leaf was added!
All done ✔️ smells amazing!
