Greek Sausage Pitas 🥙

I love Greek food 🇬🇷 after all, I’m 1/2 Greek! To get our Greek food fix in, I wanted to make a simple meal. Now with this recipe, you can be Greek too!

I imagine I’m on the island of Santorini when I eat Greek food 😋

I’ve made Greek meatballs before using ground lamb and ground beef, but this time I wanted to use ground sausage. Instead of meatballs, I browned up the sausage with the same ingredients I use for my meatballs and everything tasted delicious. For this recipe, you can use ground beef, ground lamb, ground turkey or ground sausage. For our vegetarian friends, you can make this with just veggies if you like! I like veggie pitas too 😋

For our recipe I also sautéed and put veggies on top of the sausage. When you are sautéing your veggies, make sure to season them with salt and pepper. If you are making this recipe without meat, you can use the same seasonings I use for my meat to season up your veggies. I chopped up red onion and red bell pepper, but you can also use green or orange bell pepper. You can also cook up some zucchini or yellow squash, they just take longer to cook in a pan on the stove.

I top our sausage pitas with homemade tzatziki sauce, the sautéed veggies, some cherry tomatoes and crumbled feta cheese. As a side, I make my famous Turmeric Yellow Rice. I’ll include recipes for the tzatziki sauce, sausage pitas and yellow rice below. I made the tzatziki sauce first, then put it in the fridge while I cooked everything. The sauce is made with cucumber and either plain Greek yogurt or sour cream.

Here is my tzatziki sauce recipe with the pics below! Yellow rice recipe will be below that. I make my yellow rice in our rice cooker.

For tzatziki sauce: cut your cucumber in half, then scrape out the seeds. Finely grate the cucumber and put into a small colander to get the liquid out.
Squeeze the liquid from the cucumber through a colander. The liquid needs to be mostly removed to make the sauce a good consistency. Add salt to the top of the cucumber to draw more moisture out if needed. Set aside.
In a small bowl, mix together 2 Tbsp olive oil, 2 tsp minced garlic, juice of 1/2 of a lemon, salt and pepper to taste.
Mix in either 1 cup of plain Greek yogurt or 1 cup of sour cream.
Add cucumber back into bowl and mix thoroughly. Add more salt and pepper to taste.
Perfect amount of flavor, I also do not use dill in my recipe.
