Instant Pot Pork Tenderloin

I love my Instant Pot 😍 cooks up everything so fast! Instead of using our oven to make this pork tenderloin, we use our instant pot and it makes it in under 30 mins. For my recipe, I use a marinated pork tenderloin, but you can also buy a non-marinated tenderloin and make your own dry rub. I’ll include the dry rub ingredients so you can do that if you like!

For a dry rub mix first put about 1 tsp of olive oil on each piece (you need to cut the tenderloin in half so it will fit in the instant pot and cook through). Mix in a small bowl : 1 tsp salt, 1 tsp paprika, 1/2 tsp onion powder, 1/2 tsp garlic powder, and a dash of pepper. Rub onto each piece.

This recipe is keto friendly except for the brown sugar I sprinkle on top of the pork while it’s cooking. You can always leave out the sugar, but it adds a really good flavor to the pork. The juices in the pot are then made into a yummy gravy, which goes great with my crockpot mashed potatoes!

The tenderloin I am using for this recipe, a little over 1.5 lbs. Take out of the fridge for about 20 mins prior to cooking.
Each side is browned in the instant pot on sauté mode. Brown sugar sprinkled on top with a brown sugar and bourbon spice mix.

Placed back in the pot with chicken broth, Worcestershire sauce, and liquid smoke. Pressure cooked on High for 3 mins, pressure released naturally for 15 mins.
Rested in the foil, ready to slice up!
