Crockpot Mashed Potatoes

I have been wanting to make my crockpot mashed potatoes, been having a hankering for these 😋 I also wanted to make a smaller batch so it’d be a perfect side dish for dinner and some leftovers. This batch makes about 4 servings of my crockpot mashed taters.

I love making these in my crockpot so I don’t have to use a burner on my stove. Also, I don’t have to worry about boiling water! The potatoes cook away while I do other stuff around the house, like chase after our wild toddler 😂 taking all these pics and making the blog post is no easy feat!

Making this is really easy too! If you really want to change how I make this to make it cater to your specific diet, I have some tweaks listed next. For substitutions, you can definitely make this vegan. Instead of using chicken bouillon cubes, you can use vegetable broth. For the butter, you can use coconut oil! For the creamy part of this, you can use almond milk, soy milk, coconut milk, vegan sour cream, or make your own version of vegan sour cream using soaked cashews. For the cashew version of sour cream, you would need to soak your cashews then blending with lemon juice, vinegar and sea salt. Sorry to my friends who are on keto, this is definitely not keto-friendly. This mama loves her carbs too much 😂

Peel, wash & cut potatoes into 1” cubes
Add potatoes and cubed butter to crockpot.
Chicken bouillon and water added to crockpot.
Cooked on high for 4 hours, then I drained the liquid and used my electric mixer to mash the potatoes.
Added in sour cream and cream cheese and mixed.
All mashed! If you like yours thicker, just drain more liquid off before using your mixer.
