Mini Pizzas

Who doesn’t love a fun and easy dinner?! The mini pizzas we make are yummy and easy. We use refrigerated biscuits to make the pizza crust. My husband introduced me to the mini pizzas a few years ago as a surprise for my birthday. You can add whatever toppings you normally like on your pizza, bake and eat!

We buy pre-made pizza sauce in the jar, but you can also make your own homemade version if you like. We haven’t tried this with vegan cheese, so if anyone makes it that way, let me know how it goes! You can use shredded mozzarella cheese or shred the cheese yourself, either way it should turn out tasty. Pics and steps are below as well as our family recipe at the bottom! Buon appetito!

Canned refrigerated biscuits, 8 count.
Toppings, sauce and cheese
Biscuits flattened out, spooning on sauce now.
Sprinkle mozzarella cheese on top of sauce
My husband loves pepperoni, our daughter helped put them on!
On the left, I topped 2 of my mini pizzas with pineapple bits. We also put jalapeños on my husband’s pizzas. Sprinkle a little more cheese on top of toppings. Then sprinkle Parmesan cheese on top.
All done! Cheese is melted and bottoms are browned.
These pizzas get eaten so quickly!
