I love to make tacos, burritos, or nachos at least once a week. I like to plan out our grocery shopping list and always keep items in my pantry so I can whip up my favorite side to go along on my Mexican dinner nights. Up until about a year ago, I would make my Spanish rice from the bag mix. A friend of mine came over for a Mexican style Carne Asada dinner with her family. We cooked up the Carne, made my slow cooker pinto beans, my hubby’s Pico, and one of the dishes she brought was Spanish rice. The rice she made didn’t have the salty, bland taste of a bag mix so I asked her how she made it. She said she cooked it in her rice cooker. I hadn’t heard of that before, so I wanted to look up a rice cooker recipe for Spanish rice and try it out myself.
I found a recipe (made changes over time) and now it is one of my favorite and easiest recipes to make. I keep the pantry items needed on hand and of course, lots of onions. Check out the pic of the Spanish rice below and the recipe after that!
