I have never made short ribs before, I didn’t even know what they were until I saw a recipe for them in my Pioneer Woman cookbook. The dish looked savory in the pictures and I wanted to try something new, so I figured I might as well dive right in! I picked out the short ribs from the beef section and selected Angus Prime. As far as quality of meats go, the ranking of good to excellent is Select then Choice and then Prime. My husband is a senior manager for quality control for beef products so I’ve learned a lot about the differences between the cuts of meat and quality. To not get too into the nitty gritty of it, the short ribs are located on the underside of the cow next to the brisket. When I first heard of short ribs, I thought of baby back ribs, but these are not the same thing. If you haven’t tried to make or eat short ribs before, this is the best way to cook them up even for beginners.
The Instant Pot does all the hard work for you in less than half the time it would normally take to cook these in your oven. The prep time and cook time is over an hour, so make sure you have enough time set aside to make this before you start tackling this dish. I made my slow cooker mashed potatoes recipe to go with this and the ribs and potatoes complimented each other very well. This was the best Valentine’s gift to my husband (and myself too!)
